How to win at breakfast all week long

Any morning can be hectic, but add in the new homeschool responsibilities many of us now face and things can get next-level crazy. And while your student may have 99 (math) problems, breakfast sure won't be one. So before you get caught up in your video conferences and lesson plans, here are some Sunday ground beef breakfast meal plans to level up breakfast and help get each day of the week off to a great start. 


Batch ground beef breakfast sausage recipe

  • 1 pound ground beef
  • 2 teaspoons chopped fresh sage or 1/2 teaspoon rubbed sage 
  • 1 teaspoon garlic powder 
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  •  1/4 to 1/2 teaspoon crushed red pepper

Cook 1 to 2 pounds of the mixture and add it to some of our favorite breakfasts below.

Wake up on Monday morning after a long night of binge watching only to realize you have to get your homeschool teacher A-game on? After you pound what will be your first of many coffees today, grab a mug for your children, crack a few eggs, and add your ground beef sausage and a few veggies for a delicious meal. The bonus is you’ll have few dirty dishes to clean up.

Ingredients

  • Beef Breakfast Sausage
  • 1 cup chopped fresh vegetables such as tomato, baby spinach, bell pepper, zucchini or green onion
  • 1/2 cup shredded cheese 
  • 8 large eggs
  • Salt and pepper (optional)

Directions

Spray microwave-safe mug or bowl with cooking spray. Add 1 egg and 1 tablespoon water; whisk with fork. Stir in sausage and vegetables. Microwave, uncovered, on HIGH 30 seconds. Remove; stir. Continue to microwave on HIGH 30 to 60 seconds or until egg is just set. Stir. Top with cheese. Let stand 30 seconds or until cheese is melted. Season with salt and pepper, if desired. Serve with toppings, if desired. 


Beef and Egg Breakfast Mugs

Here’s a really quick but tasty version of biscuits and gravy that can use biscuits, muffins, bread or even asparagus.  Make the gravy (or add a prepared mix) with a few simple ingredients, add the prepared sausage to your liking and simmer for a few minutes for a filling breakfast.

Ingredients

  • Beef Breakfast Sausage
  • 2 tablespoons olive oil 
  • 1/4 cup flour
  • 3 cups milk
  •  1/2 teaspoon salt 
  • 1/4 teaspoon pepper
  •  Warmed buttermilk biscuits, toasted English muffins or bread

directions

Heat oil in skillet over medium heat. Stir in flour; cook and stir 4 minutes. Stir in milk; bring to a boil, whisking constantly. Reduce heat; simmer 2 to 3 minutes or until sauce thickens slightly, stirring occasionally. Stir in sausage, salt and pepper. Cook 1 to 2 minutes or until beef is heated through, stirring occasionally.

Beef Sausage Gravy

If you're looking for a breakfast option for the carb-loving kid in your family, take a look at these protein-packed options that have more staying power than a bowl of cereal or frozen waffle. Translation? This recipe will stave off the munchies through the first math worksheet of the day. 

Ingredients

  • Beef Breakfast Sausage
  • 1 package (8-1/2 ounces) cornbread muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1/2 cup shredded Mexican cheese blend

Directions

Preheat oven to 350° F. Prepare muffin batter according to package directions with egg and milk. Fold desired amount of sausage into muffin batter. Spray 24 mini-muffin cups with nonstick cooking spray. Divide muffin batter evenly among 24 mini muffin cups, filling cup to top.  Top batter evenly with cheese. Bake for 15 to 20 minutes or until muffins are cooked through and cheese is melted and golden brown.



Easy Mexican Beef Cornbread Muffins

These breakfast cups are a great way to get the kids involved in their morning meal. Allow the little hands to crack and beat the eggs, mix in the ingredients and pour them into the muffin tins. It won't only give your kids a morning activity, it'll also give them days of delicious breakfast options. 

Ingredients

  • Beef Breakfast Sausage
  • 1 can (4-1/2 ounces) chopped green chiles, undrained
  • 1/2 cup shredded reduced-fat Monterey Jack cheese
  • 5 large eggs
  • 1/4 cup milk
  • 1 to 2 teaspoons regular or chipotle hot pepper sauce
  •  Salt and pepper

Directions

Mix sausage, green chiles and cheese and distribute evenly among muffin cups. Whisk eggs, milk and hot sauce, as desired, in medium bowl. Evenly divide egg mixture over sausage mixture in muffin cups. Bake in 375° F oven 17 to 20 minutes or until egg mixture is set and just beginning to brown. Let stand 2 minutes. Loosen edges; remove from muffin pan. Season with salt and pepper and garnish with toppings, as desired.

Beef Sausage & Egg Muffin Cups

A perfect meal to celebrate a new day. Combine your beef sausage, eggs, potatoes and any leftover onions, tomatoes or peppers and wrap in a tortilla or enjoy as a bowl if you don't have tortillas.  

Ingredients

  • Beef Breakfast Sausage
  • Eggs
  • Cheese
  • Optional: potatoes, hash browns, peppers, onions, guacamole,  tomatoes or hot sauce

Ground Beef, peppers and onions are quickly sautéed and wrapped up with scrambled eggs. Serve with lime-cilantro cream and salsa.
