slow cooker bacon cheeseburger soup
This recipe comes together with just a few ingredients and some spices you probably already have in the cabinet. It's pure, slow-cooked comfort food.

Ingredients
- 1 lb lean ground beef (93% lean or leaner)
- 2-3 large russet potatoes, peeled and cut into 1" pieces.
- 1 yellow onion, diced
- 2 celery stalks, chopped
- 1 cup shredded carrots
- 2-3 cloves garlic, minced
- 3 cups chicken stock
- 1 tsp basil
- 1 tsp parsley
- Salt and pepper to taste
- 3 tbs butter
- 1/4 cup flour
- 2 cups milk
- 2 cups cheddar cheese
Optional Toppings: Chives, Cheese, Bacon
Instructions
- Brown ground beef, seasoning with salt and pepper.
- Add ground beef, potatoes, onion, carrots, celery, basil, parsley, garlic, salt, pepper and chicken stock to slow cooker. Cover and cook on high for 4 hours.
- After 4 hours, combine butter and flour together in medium saucepan. Do not brown. Once thoroughly mixed, add milk. Pour into slow cooker. Add cheese, cover and cook on low an additional 30-60 minutes.
- Garnish with bacon, chives and cheese
