easy enchilada casserole 

This hearty Mexican casserole features layers of Ground Beef, beans, vegetables and corn tortillas.

Servings: 4

Ingredients

  • 1 (15oz) can enchilada sauce
  • 1 package of twelve 6-inch corn tortillas, cut in half (24 ct)
  • 1 (15oz) can chili beans 
  • ½ pound ground 80% ground beef, cooked and drained 
  • 1 16oz bag frozen, chopped spinach, thawed and drained
  • ½ cups shredded Cheddar or Monterey Jack cheese
Instructions  

  • Preheat the oven to 350 degrees F. 
  • Lightly grease a 9 x 13-inch pan or dish. 
  • Spread 1/3 of the enchilada sauce in the bottom of the pan. 
  • Layer 8 corn tortilla halves over the sauce, then ½ of the amount of chili beans, ½ of the cooked beef, ½ of the spinach, and ½ cup of cheese.
  • Layer 8 more corn tortilla halves, 1/3 of the enchilada sauce, the remaining beans, beef and spinach, and ½ cup of cheese.
  • Top with the last 8 tortilla halves, the remaining 1/3 of the enchilada sauce and the last ½ cup of cheese.
  • Cover loosely with foil, and bake until heated through, about 30 minutes. Cool for 10 minutes and serve.

Ingredients

  • 1 pound 80% ground beef
  • 1 medium onion, chopped
  • 1 jar (12 ounces) mushroom or beef gravy
  • 16oz frozen peas and carrots or mixed vegetables 
  • ¼ tsp pepper
  •  2-1/2 to 3 cups prepared mashed potatoes

Instructions

  • Preheat oven to 450°F. 
  • Heat large nonstick skillet over medium heat until hot. 
  • Add Ground Beef and onion; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. 
  • Remove from skillet with slotted spoon; pour off drippings. 
  • Return beef to skillet; stir in gravy and vegetables and season with pepper. 
  • Cook's Tip: Cooking times are for fresh or thoroughly thawed Ground Beef. Ground Beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of Ground Beef doneness. 
  • Spoon beef mixture into 2-quart baking dish.

Hearty Shepherd's Pot Roast Pie

Try this quick and easy stir-fry recipe. Beef steaks with vegetables in your favorite store-brand stir-fry sauce.

Servings: 4

Ingredients

  • 1 pound Top Sirloin Steak Boneless, cut ¾ inch thick
  • ¾ cup prepared stir-fry sauce 
  • (16oz) frozen Asian vegetable blend (such as broccoli, carrots and sugar snap peas)
  •  ¼ cup water 2 tsp vegetable oil 
  •  3 cloves garlic, minced
  • 4 cups cooked brown rice 
Instructions
  • Cut beef steak lengthwise in half, then crosswise into 1/8-inch thick strips. 
  • Place beef and 1/4 cup stir-fry sauce in food-safe plastic bag; turn beef to coat. 
  • Close bag securely and marinate in refrigerator 30 minutes to 2 hours. 
  • Heat large nonstick skillet over medium heat until hot; add vegetables and water. 
  • Cover and cook 7 to 8 minutes or until crisp-tender, stirring occasionally. 
  • Remove vegetables; keep warm. 
  • Remove beef from marinade; discard marinade. 
  • Heat 1 teaspoon oil in same skillet over medium-high heat until hot. 
  • Add 1/2 of beef and garlic; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.) 
  • Remove from skillet. Repeat with remaining oil, beef and garlic. 
  • Return vegetables and beef to skillet. 
  • Stir in remaining 1/2 cup stir-fry sauce; cook and stir 1 to 2 minutes or until heated through. Serve over rice.

This Italian-inspired recipe is a one-pot, fun to make and eat dish that combines ground beef, pasta, fresh zucchini and yellow squash.

Ingredients

  • 1 pound 80% ground beef
  • 1 (14.5 oz) can beef broth
  • 1-1/2 cup uncooked whole wheat pasta
  • 16oz  zucchini or yellow squash, cut in half lengthwise, then crosswise into ½-inch slices
  • 1 can (14.5 oz) diced tomatoes 
  • 2 tsp Italian seasoning

Instructions

  • Heat large nonstick skillet over medium heat until hot. 
  • Add Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally.

  • 1 pound beef Sirloin Tip Steaks, cut 1/8 to ¼ inch thick 
  • 1 tsp minced garlic
  • 4 tsp vegetable oil
  • ¼ tsp salt ¼ tsp pepper
  • ½ pound mushrooms, sliced (1/2-inch) 
  • 1 package (3/4 oz) brown gravy mix 
  • 4 cups cooked wide egg noodles
  •  ¼ cup plain, nonfat, Greek yogurt 

Instructions

  • Stack beef Sirloin Tip Steaks; cut lengthwise in half, then crosswise into 1-inch wide strips. 
  • Toss with garlic. 
  • Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until hot. 
  • Add 1/2 of beef; stir-fry 1 minute or until outside surface of beef is no longer pink. (Do not overcook.) Remove. 
  • Repeat with remaining beef. 
  • Season with salt and pepper. 
  • Heat remaining 2 teaspoons oil in same skillet over medium-high heat until hot. 
  • Add mushrooms; cook and stir 2 minutes or until tender. Remove from heat. 
  • Add gravy mix and 1 cup cold water; blend well. 
  • Bring to a boil. Reduce heat; simmer 1 minute or until sauce is thickened, stirring frequently.

  • 1 pound 80% ground beef
  • 2 packages beef Ramen style noodles
  • 1 bottle stir fry sauce of your choice
  • 1 package frozen veggies
Instructions
  • Heat large nonstick skillet over medium heat until hot.  Add Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally.  Pour off drippings and remove from skillet.   • Add veggies and 1/4 cup water to skillet  and steam until tender
